I am always looking for ways to replace gluten and corn filled foods. These arepas remind me of a corn fritter or a potato cake. A little mushy but definitely edible!
Ingredients:
1 ½ cup of grated cauliflower (I cooked mine first)
1 cup of shredded parmesan cheese
1 flax egg (you may use 1 egg)
I mixed all the ingredients and blended until mixed well. I then formed the ingredients into disks. I placed in a preheated oven (425 degrees) on a greased pan (I greased with olive oil) and baked or 10 minutes. I then removed from the oven and placed the discs in a pan of heated olive oil. I fried them until they stuck together and were a bit crispy.
They were delightfully tasty and actually reminded me of a potato cake and a corn cake all in one. They would definitely be tasty with fillings as is the practice in Latin countries.
